Sun-dried Tomato Sauce

If you think the brightness of this image makes your eyes ache, at least you're being spared the assault on your olfactory system. Rotting tomatoes have a distinctive aroma. These are culled from our harvest at the Lewis Ginter Community Kitchen Garden and placed in the compost heap. Various defects, sometimes minor - including but not limited to small bird peck holes; sometimes bigger bites from squirrels & grounghogs. Those critters never finish the whole tomato. They just have a few bites and move on to the next perfect fruit.
